Harvesting and vinification
Manual harvest, including sorting of bunches, and destemming. The grapes undergo a pre-fermentation cold maceration for around 48 hours, followed by crushing. Fermentation takes place in wooden truncated cone vats at controlled temperature

Refining
In French oak barriques for 26 months, then in bottles for 6 months

Production
800 bottles of 0.75 L

Tasting Notes
Colour: ruby red, with grenade shades
Aroma: fine and elegant: cherry, blackberry and black currant aromas, with soft notes of violet, shade at the end in liquorice and cinnamon scent
Palate: tannins of Sangiovese, rounded off by the wood, give  centrality and persistence to the palate and a notable warm end
