Through the study of our terrain, we uncovered excellent soil for the Syrah grape variety, which has been cultivated in the province since 1600, as illustrated in writings preserved in the municipality of Montecarlo in Lucca. The Lavandaia, Pura (Pure Vineyard) was born from this discovery. Harvested at optimal phenolic maturity, and after a cold maceration, the grapes are vinified in stainless steel at a regulated temperature, which is followed by malolactic fermentation and fining in small oak barrels. The development of the aromas is the natural result of fining for about 22 months and the resulting wine reflects the fruit of the Syrah; the sweet notes of cherry, intertwined with hints of blackcurrant combined with pleasant woody notes that soften into dark chocolate and roasted coffee

Harvesting and vinification
Manual harvest, including sorting of bunches, and destemming. The grapes undergo a pre-fermentation cold maceration for around 48 hours, followed by crushing. Fermentation takes place in stainless steel tanks at controlled temperature

Refining
In French oak barriques for 22 months, then in bottles for 6 months

Production
1.500 bottles of 0.75 L

Tasting Notes
Colour: intense ruby red with purple hues
Aroma: varietal, with notes of Morello cherry and cassis, and a hint of dark chocolate and roasted coffee
Palate: good structure and length, with fine grained, round and balanced tannins. Typical, light, spicy notes on the finish
