IGT TOSCANA ROSSO
Situated in northern Tuscany, in the foothills of the Apuan Alps, the Tenuta Dello Scompiglio cultivates its vineyards with full respect for nature and the terrain. Grapes propagated from the “Vigna Madre” Vineyard, handpicked at the foot of the hill, produce the Lavandaia, Bassa. Following careful selection, the healthiest and best grapes go through a process of cold maceration to optimise the extraction of the aromas. Vinification takes place in stainless steel at a regulated temperature, with skin contact lasting about 20 days, for better colour extraction. The resulting wine undergoes a period of ageing in barriques for about 18 months, during which the vibrant and fragrant fruit and mineral aromas blend with the warm and velvety aromas of the wood.

Harvesting and vinification
Manual harvest, including sorting of bunches, and destemming. The grapes undergo a pre-fermentation cold maceration for around 48 hours, followed by crushing. Fermentation takes place in wooden truncated cone vats at controlled temperature

Aroma: warm and enveloping, cherry, blackberry and black currant, with lively notes and spiced with green pepper and cinnamon
Palate: distinguished and strong, intense, with deep tannins and toasty notes that do not alter the sweetness of the fruit. Lingering, sapid finish
Just outside the walls of the Tenuta, the Cucina Dello Scompiglio, will be open before and after all the events held at SPE for aperitif, snacks, lunch and dinner, to be enjoyed both inside and outside.
